Farro

Stuck for lunch inspiration? Try this energising recipe with farro (similar to quinoa) and plenty of veg.

Serves: 4
Prep time: 10 minutes
Cook time: 30 minutes

Ingredients:

  • 200g farro
  • 1 red pepper
  • 1 yellow pepper
  • 1 orange pepper
  • 400g artichoke hearts
  • 190g pitted black olives
  • 10g mint leaves
  • 100g feta
  • 2 tbsp olive oil
  • 1 lemon, juiced

Method:

  1. Cook the farro for 10 minutes. Rinse in cold water, then transfer to a bowl.
  2. Pierce the peppers a few times with a knife and place on a hot griddle. Keep turning for 20 minutes until charred all over. Seal them in a freezer bag and set aside to cool.
  3. Add the artichoke hearts, olives, mint, feta, oil and lemon juice to the farro.
  4. Peel the skin from the peppers and remove the seeds. Tear them into chunks and add to the farro mixture.
  5. Season, mix well and serve.
